Caprese Macaroni and Cheese Pasta

Chicken With Chick Pea Soup



Chicken soup is a classic choice of all those who are fans of appetisers. Chick pea and chicken is a very unique combination. Together if used in the right manner, they can taste very good. The soup is heavy but healthy at the same time.
Serves 4
Preparation time 30 minutes
Ingredients:
         Chickpeas- 200g
         1 chicken drumstick
         Water- 2 litre
         Celery chopped- 1 cup
         Onion chopped- 1 cup
         Leek chopped- � cup
         Garlic cloves-3 crushed properly
         Olive oil- 9 table spoon
         1 tablespoon lemon juice
         Chives- chopped 1 table spoon
         parsley 1 tablespoon
         Salt to taste
Direction for preparation
The chick peas should be boiled and soft. In a large pot, add the oil and let it heat. Add the celery, onions and garlic cloves and cook them until the onions start getting brown. Also add the leek, salt and chicken and toss them around until the chicken is evenly slightly browned on both the surfaces. Before adding the chicken cut the chicken drumstick into smaller chunks.
Add the chickpeas and water to the pot and bring it to boil. Let the water reduce to half the amount you used initially. Then transfer the soup to another soup dish and sprinkle the chives and parsley from the top. Serve it immediately and hot.

The soup tastes best with garlic breads or even aloe. It is the perfect appetiser before taking your dinner. At the same time it is quite heavy and healthy as a recipe. The chick peas should not melt in the soup. To make the consistency thicker, you can also add a little amount of corn flour to it. However care should be taken that the corn flour does not form lumps and the chicken is thoroughly cooked and very tender to bite.

Marinated Chicken Fry

         Sesame oil
         1 lime juice

Direction for preparation:
Take the chicken breast meat in a shallow dish and add all the marinade ingredients to the chicken and thoroughly mix it such that the chicken is coated in the marinade uniformly.  Once you have done so, leave it aside for at least an hour or more to marinade. Meanwhile chop up some salads with cucumbers, bell peppers, shallots, carrots and decorate the plate where you are going to serve the dish finally. Then heat the olive oil in the non-stick pan and add the chicken pieces to the hot oil. Turn it around and cook until the chicken is brown and thoroughly cooked. Add the spring onions, salt and pepper and toss them all together. Sprinkle the salad with lime juice, salt and pepper and add the chicken to the dish.

The preparation is perfect for snacking and children in particular love this recipe. If you wish you can add other vegetables to toss along with the chicken as well. That way you can add some more nutrients to the recipe.

Chicken Cooked in Creamy Lime And Cilantro Sauce

Spicy Chicken Fajitas


Chicken fajitas are very popular and mostly taken for diner or lunch. The preparation along with tortillas is quite heavy a meal. The entire preparation is very spicy. The flavour of garlic and bell pepper is dominant in the dish.

Serves 4
Ingredients:
       Chicken breast meat cut into thin slices- 1 pound
       Cumin seeds grounded- 1 table spoon
       Chilli powder to taste
       Salt and pepper to taste
       Canola oil- 1table spoon
       Sliced mushrooms- 1 cup
       Red bell pepper- 1 whole sliced thinly
       3 garlic cloves
       Chipotles in adobo- 1 tablespoon and chopped finely
       8 tortillas made of flour
       Cheddar cheese grated for garnishing
       Cilantro for garnishing
       1 onion minced
       1 � table spoon of lime juice
Direction for preparation:
Marinade the chicken with cumin and chilli powder and also rub salt and pepper on it. Leave it aside for half an hour for better marinate. In a skillet, heat oil I medium flame and add the chicken to the skillet and stir it occasionally. Make sure that the chicken is cooked through and evenly done. This should take about 5 to 10 minutes depending on the quality of the chicken. Add the mushrooms, onions, bell pepper, garlic and other ingredients and cook until they are soft. Stir the chipotles in as well and squeeze the lime juice over the entire preparation. On the tortillas, divide the dish and serve it warm and garnish it with the cheese and cilantro.

The preparation is whole meal in itself and hence it is much preferred by most for their dinner or lunch. However if you do not like it this spicy you can always tweak the recipe accordingly and make a more healthy version of the same.

Chicken And Strawberry Salad

         Chicken breast, 2 pieces that are grilled and cut into wedges
         2 cup of cubed strawberries
         1 cup peas
         1 avocado chopped and salted

         Feta cheese crumbled- 4 table spoon
Direction for preparation:
In a mixing bowl put the olive oil first and then pepper, salt, lime juice, the zest of lemon and honey and whisk them together until the mixture is thick, smooth and saucy. The taste of lime and honey should dominate over the olive oil. In another salad bowl, put the romaine lettuce as the base. Over it add the chicken breast wedges that you have set aside, then the strawberries, the peas, avocado and the shallots which should be chopped finely. Toss them lightly. Add the salt and pepper by sprinkling from over the top of the salad. Drizzle the dressing that you have prepared and toss up the entire salad. The salad tastes best when it is served immediately after preparation.

The combination of strawberries with chicken that is grilled is unusual but taste particularly good when you top it with the feta cheese. The feta cheese should be evenly distributed from the top and it is perfect for adding a zest of flavour to the preparation.

Smoked Trout Salad With Mustard and Honey

Grill the trout fish after marinating it with salt, lemon and pepper for half an hour. The fish should be grilled so that it is cooked thoroughly and then put it aside to cool down. On a dish add the trout fishes and the shallots, apples, beets and arugula. In a bowl beat the Dijon mustard, olive oil, apple cedar vinegar, salt and pepper together. Put this dressing evenly on the fishes that you have prepared. Overlay the preparation with the honey as well. Toss all the ingredients together so that they are thoroughly covered with the dressing and make sure they are refrigerated afterwards. Raw Mango Salad

         Raw mango- grated- 2 medium sized mangoes

         Lemon zest- 1 tablespoon
         Mint leaves- shredded and grated thoroughly- 2 tablespoon
Direction for preparation:
Take the mangoes and wash them properly and then peel them well. Cut the mangoes into half and then de-core the seed out of it. Dill And Egg Salad
