Carrot salad is perfect for a snacking option in the evening. There are many variation of the carrot salad. Spicy carrot salad is particularly popular because of the taste variation. One can use different types of dressing other than olive oil for the salad.
Serves 4 people
Preparation time- 10 minutes
Ingredients:
� Carrot- 1 large carrot sliced into thin pieces
� Garlic minced- 1 tablespoon
� Lemon juice- 1 tablespoon
� Olive oil- 4 tablespoon
� Salt and pepper to taste
� Parsley leaves- 1 stem minced- it should be fresh
� Paprika flakes- as per your taste
Direction for preparations:
Wash the carrot thoroughly and then slice them as thinly as you can so that the dish will be more tasty. The slices should be long. In a microwave safe dish add � cup of water and then boil it. Add the carrot slices and half of the minced garlic to the dish of water which was boiling on the microwave. Let them cook until it is tender but firm to bite and must not get blanched. Drain the carrots
In a separate small mixing bowl add the olive oil, lemon juice, rest of the garlic, paprika, salt, pepper and parley and whisk them together until and unless the emulsion is thick and saucy. The taste of lemon should be dominant in this sauce that is formed. Add the sauce to the carrot that has been set aside and then toss them well together. The sauce should uniformly coat the carrots. The salad should be stored in the freeze and served cool. The preparation is perfect for snacking or as an appetiser. Garnish the salad with a few mint leaves scattered on the top of the salad. The preparation can be also done with raw carrots if you prefer them over cooked ones.
