Dill And Egg Salad

The combination of dill and eggs is particularly tasty. Pickled dill is suitable for any type of non-vegetarian salad. The hard boiled eggs are rich in protein and perfect for a heavy dish. This particular salad preparation is quite heavy and filing.
Serves 4
Preparation time- 20 minutes
Ingredients:
         Hard boiled eggs- 4- carefully and thinly sliced to retain the oval shape
         Dijon mustard- 1 tea spoon
         Classic mayo- 4 table spoon
         Salt and pepper to taste
         Diced dill pickled- 2 table spoon
Direction for preparation
Hard boil the eggs and make sure that they do not crack while they are being boiled. Cool it and then peel off the shells properly and thoroughly and then carefully slice the eggs and make sure that the yolk does not break while you are chopping the eggs. On a shallow dish spread the eggs and sprinkle the diced dills which are pickled over the entire dish. Whisk the Dijon mustard and mayo together and also add the salt and pepper in the sauce. Spread this sauce over the eggs and ensure that all the pieces are covered evenly.

This is a salad dish which you can have at room temperature or cold too. The dish is particularly filling and hence you can have this alone. A glass of fruit juice and a dish of this salad together are perfectly filling for anyone with moderate or average appetite. The salad is however very rich in protein and hence is heavy to digest. The salad can be prepared quickly and it is also perfect as a dish to be served at a party. The mayo and the boiled eggs together are rather heavy. The mayo can be substituted with vinaigrette or other lighter sauce and dressing to make the preparation lighter.
