Raw mangoes are all time favourite of those who like tangy flavours. Summer is the season when you get tasty mangoes. This is a perfect salad for the summer season. There is variety of dressing that goes with mangoes. The honey and mustard sauce is a unique combination of flavours.
Serves 4
Preparation time- 20 minutes
Ingredients:
� Raw mango- grated- 2 medium sized mangoes
� Paprika flakes- 1 tea spoon
� Honey and mustard sauce whisked together in 2:1 proportion- 2 table spoon
� Salt and pepper to taste
� Lemon zest- 1 tablespoon
� Mint leaves- shredded and grated thoroughly- 2 tablespoon
Direction for preparation:
Take the mangoes and wash them properly and then peel them well. Cut the mangoes into half and then de-core the seed out of it. With the help of a grater, coarsely grate the mangoes and put them in a dish. Add the paprika flakes, salt and pepper to the preparation. Sprinkle the lemon zest to it as well. Toss the mangoes and all these ingredients together until they are uniformly blended. Then top the honey and mustard sauce on the dry ingredients and coat them thoroughly. Toss them once more so that the mangoes are soaked in the dressing. Put the salad in the freezer and let it get stone- cold before you serve it. The salad will have a dominant tanginess and due to the lemon zest the overall taste would be rather strong. This salad is perfect as an appetiser.
The mango salad is a seasonal preparation and taste best prepared with fresh mangoes. One can also use frozen mango cubes if they do not have access to mangoes. However one has to ensure that the mango salad is taken in moderate quantity so that you do not suffer from any stomach condition.
