Fruit Salad With Greek Dressing


Fruit salads have always been the favourite among many particularly during the months of summer. When you add to it, the punch of the strong flavours of Greek dressing the combination is unique and delicious.

Serving for 4 people

Time taken- 15 minutes effectively

Ingredients:

  1.          Pineapple- 1 medium sized which has been diced into equal pieces
  2.          Apple- 1 which has been sliced into very thin pieces
  3.          Black grapes- 20 that has been halved
  4.          Avocado- 2 diced
  5.          Mint leaves- fresh leaves which have been minced- � a cup
  6.          Seasonal fruits of your choice and liking- this is optional- avoid using ripe mangoes which would not taste as good with this particular dressing
  7.          Salt and pepper to taste
  8.          Dried raw mango powder- � tea spoon


For the dressing

  1.          Extra virgin olive oil- � cup
  2.          Fresh lime juice- � cup
  3.          Dried oregano- 1 table spoon
  4.          Garlic powder- � tea spoon
  5.          Black pepper- 1 tea spoon


Method of preparation:

         Begin with the preparation of the salad dressing. You can use a hand blender or simple manual whish for this purpose. Put all the ingredients for the salad dressing within the mixing bowl and whisk it until the consistency of the olive oil is thick enough. This would yield you a cup of the dressing. Store the dressing in the refrigerator. You can keep this dressing for almost two weeks in the refrigerator if you use an air tight container for it.
         Start with cutting the fruits in to the required shapes and size. Take a flat dish which is large enough. Start with placing the slices of apple on the outer most edge of the dish. Next place the avocados. Add the pineapple to this dish next. Place the black grapes at the centre. This way the garnishing is also completed while you prepare the salad.
         Sprinkle the salt and pepper on the dish of fruits as per your taste. Make sure that the sprinkling has been done uniformly. Next top it with the mango powder. Do remember that the mango powder is also sour and hence balance the mango powder and salt accordingly. Put this dish aside for a sometimes in the room temperature. The salt and pepper would get absorbed by the fruits during this time.
         Before serving the salad, add the refrigerated cold Greek dressing by sprinkling it through a narrow necked bottle if available. Or simply drizzle it so that it coats all the fruits on the dish. Use half of the dressing that you have prepared for this purpose.

         Serve it alone as an evening snack or alongside a sumptuous dinner. The salad dressing may taste rather strong due to the combination of the lemon juice and garlic powder. The taste of lemon would be dominating this particular dressing. However if you like it to be milder, then simply lessen the amount of lemon juice that you use for the dressing. Also remember to shake the dressing every time before adding it.
