Pasta With Broccoli and Lemon Sauce

Pasta is an Italian delicacy that has been an all-time favourite for people from all over the world. When prepared with broccoli and lemon, one can witness and benefit from the goodness of taste and health all in one.

Serving for 4 people

Rime taken- 30 minutes in all

Ingredients:

  1.          1 small broccoli which have been cut into small florets and leave the shortest possible stems- the florets would be needed for making the sauce
  2.          2 cups of water
  3.          Elbow pasta boiled and drained- 400 grams
  4.          Butter- 4 table spoons
  5.          The broccoli stems- cut into long narrow strips
  6.          Salt to taste
  7.          Black pepper to taste
  8.          Oregano- � table spoon
  9.          Lemon sauce- three table spoon


Preparing the lemon salt

  1.          3 table spoons of lemon juice
  2.          � cup extra virgin olive oil
  3.          1 table spoon fresh mint
  4.          1 table spoon of dried oregano
  5.          1 table spoon of parley leaves- minced
  6.          � tea spoon of salt
  7.          � table spoon of pepper
  8.          2 tablespoons of vinegar
  9.          2 chillies chopped into fine pieces


Direction for preparation:

         Preparing the sauces: for the lemon sauce simply whisks all the ingredients in a bowl unless it is thick and saucy. Put the sauce in the refrigerator and let it cool.
         For the broccoli sauce, first you need to wash the florets of the broccoli thoroughly and then heat a pot with approximately 2 cups of water. When it starts to boil add the broccoli floret in it and about half teaspoon of salt. Let it boil until the florets are very soft and crumbling.
         Drain the florets of the excess water and heat a tablespoon of butter in the frying pan. Add these florets to the butter along with salt and pepper to taste. Saut� it for two minutes and then let it cool. Once it has reached the room temperature, blend it into a smooth puree in the blender. Take note that the amount of salt you add to the sauce is equivalent to what you would be using for the entire preparation so you need not add additional salt to the pasta.
         To boil the pasta, simply add a little bit of olive oil and salt to the boiling water and then put the pasta in it. Let it boil for 10 minutes until the pasta is firm to bite but soft enough.
         On the frying pan, add the butter and heat it. Then add the stems of the broccoli, oregano and let it fry until the stems are soft.

         On a serving dish, spread the pasta uniformly and then over it pour the broccoli stems and the residue of the butter which you used for frying the broccoli stems. Top it with the broccoli sauce and then three tablespoons of the lemon sauce. Mix whole of it together. The dish is suitable for serving hot or cold as per your liking and choice and your taste preferences.
